Ginger Peach and Cherry Smoothie

3 ripe peaches, washed, peeled pitted, cut into chunks and frozen
1 cup tart red cherries, washed and pitted
1 teaspoon diced crystallized ginger
6 ounces peach soy yogurt
1 tablespoon honey
2 tablespoons lemon juice
2 tablespoons frozen pineapple juice concentrate, thawed

Combine all ingredients in a food processor or blender and process until creamy. Serve right away. Make about 3 servings

Rum Tofu Sweet Potato Pie

1 pound firm silken tofu
1/2 cup vanilla soymilk  
2 cups mashed cooked sweet potato
1 cup packed brown sugar
1 egg white
2 tablespoons dark rum  
1 1/2 teaspoons vanilla extract
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cardamon
1 (9 or 10 inch) Graham Cracker Pie Crust

Preheat oven to 350 degrees. Combine tofu and next 8 ingredients in a food processor or blender and process until smooth and creamy. Pour the mixture into the crust and bake for 1 hour, until pie mixture set. Cool and serve warm or room temperature. Make 1 (9 or 10 inch pie) 6-8 servings.
