Tropical Energy Bars
For a quick pick up after workouts, give these bars a try.
¼ cup chopped walnuts
1 cup craisins (dried cranberries)
½ cup chopped dried papaya
½ cup chopped dried mango
1 cup finely chopped dried pineapple
1 teaspoon finely minced crystallized ginger
1 cup whole wheat flour
3 tablespoons canola oil
1 teaspoon coconut extract
2 eggs
1 egg white
½ cup papaya nectar
Preheat oven to 350 degrees. Toast walnut in baking pan until golden
brown, approximately 8 minutes. Spray a 9 x 9 inch baking pan with nonstick
cooking spray. In a large bowl, combine toasted walnuts, dried fruits, ginger
and flour. Mix well. In another bowl, combine remaining ingredients and mix
well. Add liquid mixture to flour mixture and mix well. Spread evenly into
prepared pan. Bake for 1 hour or until toothpick inserted in center comes
out clean. Cool on a wire rack completely. Cut into bars.
Makes: 36 Bars.
