3 ripe peaches, washed, peeled pitted, cut into chunks and frozen
Combine all ingredients in a food processor or blender and process until creamy. Serve right away. Make about 3 servings
Rum Tofu Sweet Potato Pie
1 pound firm silken tofu
Preheat oven to 350 degrees. Combine tofu and next 8 ingredients in
a food processor or blender and process until smooth and creamy. Pour the
mixture into the crust and bake for 1 hour, until pie mixture set. Cool and
serve warm or room temperature. Make 1 (9 or 10 inch pie) 6-8 servings.
